Do you REALLY know what is in each of the products you use? There are SO many toxic and just unecessary chemicals in the stuff we use every single day (Download the Think Dirty app and see). This doesn't mean that all chemicals are going to kill me, but over time that stuff all adds up and seriously affects our bodies. So, when it's possible I think it's definitely worth it to be a more intentional about what's going in or on my body! It just makes sense to me. Why use toxic stuff for everday common things when I can use natural, essential oils instead??

Still thinking about how I want to re-create this Roasted Veggie Tart I made today to lighten it up a bit and make it a wee bit healthier🤔. The final part of 35% whipping cream to be poured over top is not shown here, and it has both ricotta and feta for creaminess. The roasted veggie layer is sweet potato, eggplant, zucchini, and peppers and the bottom layer was slow cooked caramelized onions. Need I say more?! Scratch that.. maybe I wouldn’t change a thing and just have this as a decadent treat.  Afterall, it’s all about balance, right?! Clearly I didn’t plan this for the menu today and my client uses some pretty awesome recipes for her meal plan!

Matcha makes my heart happy. 
~
I drink one of these babies every single morning & it just starts my day off right!
~
I’ve noticed such a huge change since I switched from coffee to matcha.
~
Coffee definitely gives me energy, but I ALWAYS crash after a couple hours & I feel absolutely exhausted the rest of the day.
~
It also tends to give me jitters or feelings of anxiety & it’s just not worth it to me anymore.
~
Matcha, on the other hand, has changed the game!
~
It has L-theanine which actually helps slow the absorption of caffeine, meaning you get less of an initial energy spike but it lasts much longer.
~
It’s also loaded with antioxidants so you’re actually helping your body rather than dehydrating it with coffee!
~
I’m obsessed with my matcha lattes & they’re so simple to make!
~
-mix 1 cup almond milk with 1/2 cup filtered water
~
-heat (stove or microwave) until warm but not boiling
~
-pour in blender & add:
~
-1 tsp @matchalove matcha powder
~
-1 scoop @vitalproteins collagen peptides
~
-1 tbsp coconut butter
~
-1/2 tsp spirulina (loaded with antioxidants & plant protein)
~
-1 tsp maca powder (helps with energy & hormone balance)
~
-dash of cinnamon
~
-stevia if desired
~
Blend, pour in your favorite mug (this was a gift from one of my students - thanks Ella & Nicole!), & enjoy your delicious, frothy latte!

It’s #WhatIEatWednesday!!!  Today’s post shows how I eat when I’m not super focused on nutrition. You’ll notice that all of the food is “healthy” but not super nutrient dense. I wouldn’t at all call this a “bad” day of eating, and it’s certainly better than eating processed junk food all day, it’s just not ideal. Ideally I would want to have 7-10 cups of veggies in my day.
BREAKFAST: Shoutout to my roommate for buying more strawberries than she could eat and inspiring this parfait 
The bottom layer is chia seeds with @malkorganics almond milk and @orveganic chocolate cashew milk
The yogurt layer is @strausmilk full fat Greek yogurt mixed with @organifi chocolate protein, cacao superfood mix with reishi from @uchoosesuperfoods, some cinnamon, and a splash of maple syrup
The granola layer is chocolate @paleonola, hemp seeds, and shredded coconut
The fruit layer is strawberries
Topped with a drizzle of chocolate @eatnuttzo 
A maca-berry @healthade kombucha on the side
🥛POST WORKOUT SNACK: chocolate cashew milk from @orveganic, @organifi chocolate protein, @spectrumorganic chai & flax with coconut and cacao, @artisanaorganics cashew butter (sooooo yumm), @foursigmatic reishi hot cocoa, a splash of maple syrup, and ice

I wouldn’t at all call this a “bad” day of eating, and it’s certainly better than eating processed junk food all day, it’s just not ideal. Ideally I would want to have 7-10 cups of veggies in my day. PLANTAIN BACON FRITTERS WITH AVOCADO AND POACHED EGG {PALEO & WHOLE30}

INGREDIENTS
* 2 large yellow plantains
* 6 slices nitrate free, sugar free bacon (sugar free for Whole30)
* ½ tsp fine grain sea salt
* black pepper
* 4 eggs (to poach - or cook to preference if you prefer not to poach)
* 1 medium avocado
* greens of choice for garnish

INSTRUCTIONS
To Make the Fritters:
1. First, cook bacon over medium-hi heat until crisp, drain on paper towels and save ¼ cup of rendered bacon fat
2. Cut off the ends of your plantains and score the sides to remove the peel. In a large bowl, mash the plantains with a potato masher until smooth (a few lumps are fine)
3. Crumble the cooked bacon and add to the mashed plantains. Also add the salt and pepper and mix.
4. Heat a large nonstick skillet over medium heat (no hotter) and add the ¼ cup bacon fat
5. Form the plantain mixture into 8 small patties and fry in the bacon fat over medium heat, adjusting the heat to avoid burning. Cook on each side until golden brown and crisp.
To poach the eggs:
1. First, crack them carefully into a bowl without breaking the yolks.
2. Heat 1-2 inches of water in a large shallow pan until small bubbles form (a simmer) and whisk the water in a circle (helps keep the whites together)
3. Carefully add the eggs to the simmering water, poach for 2-3 minutes until the whites have set, and remove with a slotted spoon onto a plate. Sprinkle with a bit of salt and pepper.
4. Serve fritters with sliced avocado, your favorite greens, and a poached egg for dipping. Enjoy!

Yummy Egg Burrito: #healthcoach #healthyalternatives 
Mexican Beef Egg Burrito
Ingredients:
2.5 oz 93% Ground Beef, cooked (1/2 Lean)
1 Light Queso Fresco and Chipotle Laughing Cow Cheese (1/2 Healthy Fat)
1/4 cup Rotel Tomatoes or Diced Tomatoes (1/2 Green)
1/2 tsp Taco Seasoning (.75 Condiments)
1 cup Egg Beaters (1/2 Lean)
1 tbsp Chipotle Salsa (1 Condiment)
Directions:
Combine cooked ground beef with, tomatoes, laughing cow cheese and taco seasoning until combined over medium high heat. Set aside.
Spray a non-stick skillet with cooking spray over medium high heat. Add egg beaters. When one side is done, flip to cook the other side like an omelet.
Place the omelet on a plate. Add ground beef mixture to the center and fold one side over the meat mixture. Then fold the other side over the meat to form a burrito. Top with 1 tbsp of salsa. Delicious!
*You could use 1 tbsp regular cream cheese as 1 Healthy Fat or 1 tbsp light cream cheese as 1 Condiment

Yesterday marked two years since I decided to take steps towards improving my strength, endurance, and overall health.  Two years of ups and downs.  I’ve been hurt and unmotivated countless times, but I got back up and kept trying over and over.  Two years of trial and error, trying to figure out what works best for me. Do not give up!  It takes time.  A lot of it!  I know it’s hard.  I know that it can feel as if you’re going absolutely nowhere, and like it’s impossible.  I’m here to tell you that it’s NOT impossible.  It may be hard, but it is SO worth it.  Confidence and courage will be built along the way.  Keep your head down, have patience, and put in the work.  No one can ever take away what you do for yourself.

To make my bowl:

For the overnight oats: 
70g oat flakes
1 tbsp chia seeds
1+1/2 tbsp sweetener of choice 
1 tsp maca powder 
1 tsp blue spirulina powder
1 tsp vanilla extract
190 ml milk of choice
a pinch of salt

Add all ingredients into a jar, mix well and let it sit in the fridge over night.

For the chia pudding: 
1 tbsp chia seeds
1 tsp sweetener of choice 
1 tsp blue spirulina powder
1 tsp vanilla extract
4 tbsp milk of choice (90 ml)
a pinch of salt

Eating healthy doesn’t have to be hard. Don’t over complicate it! I always just try to focus on creating balance with some protein, veggies and maybe carbs. Just depends on the meal. .

Another tip- I eat a lot of grilled chicken- not sure about you guys but it gets borrinnngggggg. So I make it new by adding some spicy sauce i can dip in sparingly. Like a little buffalo or spice! 
And waaaa laaa- it’s delicious again. .

Speed work today. 
I slept through the night again last night it's like Christmas in May with 2 nights sleep in a row with menopause.  I don't know if it's my nutrition being so so blah and clean right now due to my recent IBS flare up or staying up a little later the past few nights but I'm digging it and no complaints!

Speed work today. I slept through the night again last night it's like Christmas in May with 2 nights sleep in a row with menopause. I don't know if it's my nutrition being so so blah and clean right now due to my recent IBS flare up or staying up a little later the past few nights but I'm digging it and no complaints! Hump day bowl  spinach, roasted carrots, edamame, hard boiled egg, avocado, and lots of @manitobaharvest hemp seeds. Almost every lunch of mine is either leftovers from dinner, a huge salad, or some assortment of the roasted veggies and proteins that I can throw together. Hence meal prepping the weekend before being vital! I ended up adding a hearty chunk of roasted sweet potato and @cedarsfoods sun dried tomato hummus (one of my favs!!!) to feel satisfied and not starving an hour later... #mindfuleating

Most red fruits and vegetables are a good source of Vitamin C. The root chakra is connected to bone, skin, and the adrenals which all need Vitamin C to thrive. Happy Hump day! Made one of my favorite smoothies for breakfast this morning 🤤 but unfortunately it started melting way faster than usual so it was eaten in approximately 5 minutes  I'm guessing it's because of the humidity outside. Oh well! Have a fabulous day everyone! // frozen banana, zucchini and cauliflower + @sunwarriortribe vanilla protein + @philosophielove green dream + chia seeds + @earthbalance coconut pb + ice. Blend and top with @goodmixfoods blend 11 (love this stuff!)

Happy  Day!! Woke up at 5 this morning to get to work and study for a couple hours before my actual work day started (I am not a morning person so, I can’t believe I did it either) I had this for dinner last night and all I have to say is y’all NEED THIS IN YOUR LIFE ASAP.

@traderjoes red lentil pasta 
@miyokos_kitchen sundried tomato garlic vegan cheese 
Fresh kale & spinach + minced garlic 
Bone broth + unsweetened almond milk (didn’t measure) 
Pink salt + red pepper flakes+ garlic powder
~Directions~
I sautéed the greens in garlic and Avo oil till fully cooked. I added the vegan cheese to the pan and add bone broth and almond milk to get that creamy cheesy consistency. You can add as much or as little as you’d like depending on how thick of a sauce you want. Lastly add the pasta and combine and you have the perfect comforting meal!
