Pretty in pink.  Take a look at @white.blank.space's recipe for this delicious Beet Hummus Toast below! 
Ingredients:
1/2 roasted beet
1 15oz can chickpeas, rinsed
Juice of 1 lime
3 tbsp tahini
1 tbsp minced garlic
salt to taste
1/4 cup olive oil
Directions: 
Blend everything except the olive oil first. Once the mixture is smooth, add the olive oil and pulse to not over-process olive oil.

Have a looooong day so a girl needs options 🤷‍️

For lunch I just had some ham and turkey roll ups, baby carrots and cucumber slices with hummus (not pictured), a couple grapes, and a @leefromamerica fat ball for some healthy fats! I try to incorporate fats, carbs, protein, and a veggie into every meal! Doesn’t always happen, but it’s a good starting point! •

#local #organic #pastureraised whole chicken  getting roasted in my @allclad pan with a citrus  glaze, fresh herbs , red onion and cauliflower  #cheftips ‍‍ wash the cavity then rub with sea  salt and stuff with 1/2 onion, 4 cloves fresh garlic and fresh parsley. Rub the bird with freshly ground black pepper, avocado 🥑 oil @olivado_oils , 21 seasoning salute @traderjoes and the juice of one orange . Lay the red onion, cauliflower, fresh parsley, sliced spring green onions and fresh thyme around the chicken then season with sea salt, black pepper and avocado oil as well. Roast at 400 for 1/2 hour then drop temp to 350 and continue to roast another 1 1/2 hour.  Enjoy! @chef_emery ‍‍️ oxoxox

#local #organic #pastureraised whole chicken getting roasted in my @allclad pan with a citrus glaze, fresh herbs , red onion and cauliflower #cheftips ‍‍ wash the cavity then rub with sea salt and stuff with 1/2 onion, 4 cloves fresh garlic and fresh parsley. Rub the bird with freshly ground black pepper, avocado 🥑 oil @olivado_oils , 21 seasoning salute @traderjoes and the juice of one orange . Lay the red onion, cauliflower, fresh parsley, sliced spring green onions and fresh thyme around the chicken then season with sea salt, black pepper and avocado oil as well. Roast at 400 for 1/2 hour then drop temp to 350 and continue to roast another 1 1/2 hour. Enjoy! @chef_emery ‍‍️ oxoxox

 i'm a huge advocate for cycle syncing - opting for certain foods during your menstrual cycle. foods that are particularly worth syncing are seeds. don't worry, i promise not to make any seedy jokes! .
during first two weeks of my menstrual cycle, i opt for seeds such as pumpkin + flax. these help to balance excess estrogen (the primary female hormone which in estrogen dominance causes bloat/weight gain) + encourage progesterone (that hormone which encourages pregnancy which, if you have pcos, you are more likely to be low on). whilst pumpkin seeds are high in zinc (doing all that prepping work for the second half of your cycle), flax seeds contains lignan (which blocks estrogen). measures? a tablespoon of each will do, everyday.

during my second half of my menstrual cycle i switch to sesame + sunflower seeds. sesame seeds contain the magic - aka those lignans i mentioned above - to block excess (o)estrogen which is raised during these phases. whereas sunflower seeds help the liver to detox and balance our hormones. again, a tablespoon of each seed will do. easy to remember, ey?

when it comes to buying your seeds, i’d recommend organic, raw ones which you can grind. I'd also say to store them the fridge (including your seeds). as i am currently on holiday in greece for a few short weeks, i don’t have a grinder so i bought some delicious, local tahini (made of sesame seeds) to enjoy over my strawberries. sometimes we've just got to make do with the best we have.

if you your cycles are irregular atm (don't worry we can get there) i would recommend starting the first half of your cycle (the follicular ) at the next full moon. and then switch on day 14 (the luteal phase). whose ready to start their seed syncing?

Did you know grocery stores buy more food than they know will be bought to give the store the appearance of abundance? The appearance of abundance leads to more impulse buys.
Wrap your brain around that. They buy food they know will be thrown away because it's more profitable than buying less. 
How are you fighting food waste?
We waste 40% of our food in the US. 1 in 6 in the US is food insecure and we could feed all of them, consistently with the food we throw away. 
It's partly due to industry standards. A potato is too misshapen, too large, or too small so it's not deemed pretty enough to sit on the store shelves. We buy too much food. Best by, sell by, and use by dates are all misleading.
Shopping in a zero waste way, or let's be real, shopping how everyone shopped until the 50s, just makes sense. 
There are no labels to distract you. You're filling your own containers, and buying exactly what you can eat before it goes bad. 
Buying in bulk is often cheaper. 15% of the foods price goes towards packaging. Organic pinto beans cost $2 a 1lb in plastic bag. From the bulk bins I can get 1lb for $1.29.
If you haven't seen then documentary Wasted @wasteddoc, I highly recommend it! 
It's entertaining and sheds a light on a lot of the problems surrounding food waste.

I get asked all the time if I follow a specific diet and the answer is no. Unless I am following something for therapeutic purposes like when I followed the Paleo diet for my adrenal fatigue. 
Yesterday I made a vegetarian meal without intending to do so, today I am making spaghetti with grass fed beef and spaghetti squash. 
One diet isn't better than the other. If a vegan or vegetarian diet makes you feel amazing- great! If keto or paleo makes you feel like you can conquer the world- awesome. The best thing you can do for yourself is simply ask, how do I feel when I eat these foods? If you feel good than you are on the right track. 
But I have to say this vegetarian meal with @wildonionnutburger @daiya creamy ceasar dressing, coconut-bacon chips and caramelized onions was pretty fan-friggen-tastic. .

Vegan zucchini + cucumber noodles with spicy creamy sriracha sauce and sugar snap peas ️. -
Currently 8:00 am here in Maui  and Bryan has to work today so I'll probably grab a coffee and go explore, stay tuned .

1 cucumber (spiralized)
1 zucchini (spiralized)
8-9 sugar snap peas (halved)
1 tbsp chopped scallions sriracha cream:
1/4 cup almond yogurt 1 tsp apple cider vinegar 1/2 tsp sesame oil 1/2 lime 1 tbsp sriracha (more or less to taste)
salt and pepper to taste completely coat the noodles in the sauce, add the snap peas and scallions. I love eating mine raw but you can lightly steam the zucchini.  also add protein I'd you'd like

Thai Peanut Pasta Salad:
1 box Banza rotini pasta
¼ cup + ⅛ cup Peanut Butter + 1 tablespoon honey (I used @naturenates honey peanut butter)
1 teaspoon sesame oil
1 teaspoon soy sauce
1 teaspoon rice vinegar
3 tablespoons water
1 teaspoon sriracha
1 cup shredded red cabbage
1 cup shredded carrots
3 green onions, sliced thinly

INSTRUCTIONS
-Cook pasta according to package directions. Drain and rinse under cold water until pasta is cool.
-In a small bowl, whisk together peanut butter, honey, sesame oil, soy sauce, vinegar, water and sriracha.
-Toss noodles with sauce.
-Toss cabbage, carrots and green onions with pasta.

It's been fun reminiscing the last few days with my parents about their travels. I think they really ignited that sense of adventure in me when I was young. Growing up they used to take trips with their friends to some of the coolest (then remote) spots. Every summer they would sail their own boat with my aunt and uncle for two weeks in the British Virgin Islands. Talk about goals. My dad would come home with pictures of crystal turquoise blue waters, stories of wandering the islands and they'd bring me home t-shirts from places like Tortola, Virgin Gorda or Jost Van Dyke. They even named our boat after their favorite bar -- The Soggy Dollar. I haven't quite checked that one off my bucket list yet but a few years ago Chance and I went down to Puerto Rico and cruised to Vieques and Culebra. We've been exploring the desert a lot lately but as summer approaches, I'm craving a beach getaway. Anyone else?

an oldie but always a goodie, these gluten free + vegan peanut butter banana oatmeal cookies are always the perfect little treat  only a short list of healthy, simple ingredients— and they’re free of refined sugars. Happy Wednesday! Details below ••

Makes 6 cookie— recipe can be easily doubled! 
2/3 cup of oats, blended into a flour (or use pre-blended oat flour) 
2 tbsp natural peanut butter (no sugar added, I used @wild_friends)
1 tbsp ground flax seed
1 tbsp pure maple syrup 
1 banana, mashed 
1/2 tsp vanilla extract 
Pinch of sea salt 
Optional: 1/4 cup dark chocolate chips 
1. Blend oats in a blender or food processor for about 20 seconds, until it makes a flour-like consistency 
2. Combine all ingredients in a bowl 
3. Drop unto parchment paper in about 1 tbsp size portions, form into round shape.
4. Bake at 350 for 12-14 minutes. Enjoy! Store in fridge.
