I’M BACK FROM VACA and back to my normal routines (desserts of course)! Boy have I missed finishing my night with @loving_earth salted caramel chocolate and a couple of homemade mini (shhh vegan AND paleo) fig muffins. Name a better duo... I’ll wait But being  110% serious, vacation is fun, but I was SO happy to come back to my normal eating routines and not eating out! Great for grilled chicken or pork...tasty on fish tacos too!

Recipe:
Combine ingredients:
1/3 cup diced red onion
1/3 cup diced small yellow tomatoes, seeded
1/2 cup diced strawberries
1 banana pepper, seeded and diced
1/2 small avocado, diced
1 garlic clove, minced
1/2 teaspoon salt (or more)
1/3 cup chopped cilantro

These grain/dairy free & sugar detox approved salmon cakes are PERFECT for a quick weeknight meal - they take only 20 min to prep & cook from start to finish and you feel like you’re eating gourmet ‍️

The full recipe is in the link in my bio, but last night I just had to work with what I had in the fridge 🤷‍️ so this was: 2 (6oz) drained cans of @costco wild salmon, 2 organic cage-free eggs, 3 tbsp finely chopped organic white onions, 2 tsp Dijon mustard and some seasoning (garlic powder, onion powder, fresh rosemary, ground sage, paprika, and s+p). That’s it!!

Combine all ingredients well, form into 4 salmon cakes and cook on each side for 4-5 min or until lightly browned.

I also made some delicious homemade tartar sauce! Combine in a food processor: 1 tbsp @primalkitchenfoods mayo, 1 tsp yellow mustard, 1 tsp finely chopped pickle, ~1 tbsp lemon juice, 1/2 tsp dill, 1 organic garlic clove and a dash of s+p.

I paired it with roasted brussels sprouts, cucumbers and hummus. Enjoy!!

Grilled Chicken Bruschetta on Zucchini “Toast”.

Honey and cardamom chicken with smokey veggies did the trick. .
.
500g chicken breast, chopped
1 onion, chopped
2 sweet peppers, sliced
2 tbsp black olives, sliced
2 handfuls kale
2 cloves garlic
1 chilli, sliced
2 tbsp honey
2 tsp paprika
1 tsp cumin
1/2 tsp ground coriander
5 cardamom pods
Salt and pepper to taste
Coconut oil to fry .
.
Melt some of the coconut oil in a pan, add the chopped onions and peppers and fry for a few minutes before adding the garlic, olives, chilli and 1 tsp of paprika. Continue to cook for another 5 minutes before setting aside. Re-oil the pan and add the chicken, cumin, coriander and remaining paprika. Fry for a few minutes and in the meantime split open the cardamom pods and empty the seeds into the pan. Cook for around 10 minutes until the chicken is almost cooked before adding the honey with a splash of hot water to help mix everything together. A few minutes before the chicken is completely cooked add the kale and fry on a high heat until everything becomes crispy. Season with salt and pepper.

Creamy Paleo Chicken Skillet with Mushrooms and Bacon

2 boneless skinless chicken breasts, cut into 1-inch pieces
3 slices bacon
1 small yellow onion, chopped
1/2 red bell pepper, diced
1/2 yellow bell pepper, diced
6 oz. white mushrooms, sliced
1/2 tbsp white wine vinegar
1 14.5-oz. can coconut milk
2 cups fresh kale, stems removed and shredded
Salt and pepper, to taste

Instructions

1. Cook the bacon in a large skillet until crispy. Remove to a paper towel-lined plate and crumble. Set aside. Discard the bacon fat from the pan except for one tablespoon.

2. Add the onion to the pan and sauté for 4-5 minutes until soft. Push the onion to one side and add the chicken to the pan. Lightly brown the chicken, and then stir in the bell peppers and mushrooms. Cook for an additional 5 minutes. Stir in the bacon.

3. Add the white wine vinegar to the pan to deglaze. Add the coconut milk and kale. Cook for 3-4 minutes until the kale is wilted and the sauce is slightly thickened. Season to taste with salt and pepper. Serve warm.

A simple and satisfying prepped lunch today: sweet potato, zucchini, broccoli, and a roasted chicken thigh. To finish my lunch, I had a chicory latte made by mixing @ecomiloficial unsweetened almond milk powder and @chikkonotcoffee powder and then just adding hot water. I'm still experimenting with proportions but having an instant powdered drink option at the office is great.

Paleo Day 14 .... ja es ist ne Karotten 🥕 und Zucchini Eintopf. Ist mir etwas scharf gelungen. War keine Absicht. Gegessen wird es trotzdem mit Fisch ..... morgens muss es für mich immer praktisch und schnell gehen und abends habe ich keine Zeit mir vor zu kochen. Dass was wir abends kochen, ist meist soooo lecker, dass nichts mehr übrig bleibt für den nächsten Tag. 
Die Ernährung nach Paleo fällt mir echt leicht. Ich merke langsam auch die ersten Erfolge an meinen Kleidern. So get this, working on the website looking for some photos of myself to share and I find a before photo of me on the right’ from 5 years ago and the ‘me on the left’ photo is 3 weeks ago when I started the research paper... now granted I know a hell of a lot more now about nutrition and behaviour change thanks to my studies @holisticperformancenutrition but by gosh it made me laugh at how much the before photos were just the same- after the marathons, all the gym sessions and clean eating and I’m still my ‘before’ photo🤣

Don’t get me wrong I think I’m in good shape in both photos and if I’m like that in another 5 years at the BIG 4 0 I’ll be stoaked! 
Case and point- the body has its own natural set point where it’s most happy, and the moment we embrace that, imagine how freeing that will be.

Pumpkin pie smoothie!!!

#tuesdaytip Use the entire broccoli! I don't know if I am more budget conscious or just hate wasting food. Either way, taking one bunch of broccoli and turning it into two side dishes turned out pretty tasty and its #zerowaste .

What's your favorite way to eat broccoli?

They are both super simple and finished in less than 20 minutes. Each serves 4 as a side dish.

The first is roasted broccoli. (Why is there no broccoli emoji?!?!)

Ingredients:
1 bunch broccoli cut into florets
2 tbsp garlic infused olive oil (or regular olive oil with 3 sliced garlic cloves)
Salt & Pepper to taste

Directions:
Preheat oven to 400°
Toss florets with olive oil, salt & pepper. Spread on parchment lined baking sheet. Roast in oven for 20 mins.

Next is Broccoli slaw with an Asian inspired dressing. If you've been to a potluck, chances are you've had broccoli slaw with ramen noodles. This is a much healthier version of that dish.

Ingredients:
Broccoli stalks
1 carrot
2 green onions
1/2 c shredded red cabbage
Salt to taste
Dressing:
3 tbs olive oil
1 tsp toasted sesame oil
3 tsp rice vinegar
1 tsp grated ginger
Juice of 1/2 lime 
Pinch of red pepper flakes
Cashews or slivered almonds

Directions:
Mix together the ingredients for the dressing and set aside. With a vegetable peeler, peel the outside of the broccoli stems. In a food processor or a box grater, shred the broccoli stalks and carrot. Add thinly sliced green onion and shredded cabbage. Season with salt. Toss with dressing. Top with nuts before serving.

In my stories I talked about starting a Whole30 round during June. This dressing has Whole30 options making it the perfect light & healthy summertime dish...also great for meal prep

Ingredients

3/4 Cup Olive or Avocado Oil
1/4 Cup Fresh Lemon Juice (1-2 lemons)
1 Tablespoon Poppy Seeds
1 teaspoon Dijon Mustard
2 Tablespoons Mayonnaise
Salt/Pepper To Taste
**honey** Instructions

Whisk all ingredients together until fully combined. Or, add ingredients to jar with a lid. Tighten lid and shake until incorporated.

Refrigerate any leftovers.

Recipe Notes **If a sweetened dressing is preferred, add maple syrup or honey 1 teaspoon at a time until desired flavor. Note: this recipe is NOT Whole30 compliant when sweeteners are added.**

Was able to do a little bit of food prep this morning. Tried out a new trick that I saw on IG (sorry I can’t remember who I saw it from!). “Taco salad” jars! Homemade salsa  on the bottom, ground beef with garlic/seasoning, kale, and than big chunks of red pepper and onion. I’m going to use a bit of @primalkitchenfoods ranch for a “sour cream”. Lunch for the next few days. ————————————————————

It’s blueberry season right now and my mom and I got to go on a fun mother daughter outing- blueberry picking!! This farm was so cute! It had chickens and roosters running around and it was fun to be in nature and see how blueberries actually grow! .

Not only did we pick some of the biggest blueberries I’ve EVER seen in my life (no joke!) but we got 6 lbs for $14! At the grocery store you typically get half a cup of organic blueberries for a whopping $6! I think this was a much better deal

A quick note about blueberries. Blueberries have very malleable skin. When sprayed with pesticides, they absorb it all into their delicate flesh. My advice, eat organic or unsprayed berries at all costs! Because of the high pesticide residue found in berry samples...If faced with conventional inorganic berries- if it were me, I wouldn’t eat them
