This pesto was just TOO good and so so easy. 
Assemble the plate:
-@eatbanza chickpea pasta (this is why the meal is filling)
-sweet potato fries (slice/ dice, drizzle with avocado oil and s&p, cook at 425)
-sliced avocado -wish I would have added: sauteed mushrooms, but I was all out. They would have been delish with this!

Make the pesto (recipe found and adapted from Pinterest)
1-2 large handfuls chopped kale
1 handful fresh basil
1 lemon, juiced and zested
s&p
1/4-1/2 cup olive or @chosenfoods oil (see what the consistency is like)
1/4 cup walnuts

Pesto is commonly made with garlic, but if your taste buds or tummy are sensitive to raw garlic, I think it tastes just as good without it. If you do add it, 1/2-a whole clove would be just the right amount. 
Add all this to a food processor or your handy dandy high speed blender

I shared this omelet yesterday in my @lovebeets takeover - don't forget to enter the giveaway!
This morning I woke up to to a message and picture (of an omelet that looked just like mine!) that's in my stories, and it really just made my day. 
Quick and healthy meals are game changers and I want every to feel like they have the tools and knowledge to make them!

Here's how to make the omelet:
-heat a pan to medium heat -while the pan is heating, crack 2 eggs into a bowl, add a tiny amount of water (like 1-2 tsp), and whisk eggs together
-add grassfed butter, ghee, or avocado oil to pan (Don't be scared of healthy fats!)
-add whisked eggs, swirl pan to evenly coat egg mixture
-turn pan heat down a little - so the bottom doesn't burn -using a spatula or pancake turner, keep an eye on the bottom to make sure it doesn't get too brown
-when both sides are cooked, gently slide the omelet onto an adjacent plate
-if you want cooked toppings/fillings, cook those first!
-I topped this one with: sauteed red pepper, arugula, and 1/2 an avocado

Between my grandmother passing away, and a few other things happening concurrently, I've taken a big step back from Eat Good Food & Move. Some of it has been to grieve privately, but some of it has been I haven't really been that hungry, and making pretty food just to take a picture of it seemed sort of wrong. 🤔

My entire life, stress = junk food and sadness has = no appetite. And although I've done a better job as of late fueling my body even during times of stress (with the exception of one evening that I found myself sitting at Sonic drive-thru eating tatertots ) most of my meals have been the bare minimum to keep functioning. Not really photo-worthy. 
Although I'd consider myself baaaaaaack today (and trying to catch up on comments, emails, and everything else!) I want to change things a little going forward. Simple meals are what have fueled me over the past few weeks. They are what most of my dinners consist of (because I'm too worn out to do something a little fancier by the end of a long day of cooking). They are all that most of my friends and family have time for on a regular basis. 
You'll start to see more Simple Meals posts on my feed in the future. Meals that contain a few veggies or fruits (ones you can actually find and buy without several grocery store treks and spending an arm and a leg), and a good balance of protein, carbs, and protein. 
Meals that don't require an exorbitant amount of time, but maybe just a little prep and forethought (or maybe not ). Eating the right foods can make our lives better, and I hope I can empower all of you to do just thatThanks for all your patience and love ️

This super quick breakfast/ lunch/ even dinner is a common one around here:
•omelette with eggs from grandpa’s farm (crack 2 eggs, add a teeny tiny bit of water, and whisk until mixed. Melt @kerrygoldusa butter in non-stick pan on medium heat, thoroughly coat pan with butter, and then add eggs once pan is hot. Swirl around to create an even layer, turn down heat little, when it’s cooked through, gently slide onto a plate). The secret to a good omelette is good butter!!
•spinach cooked in grass fed butter (not very appetizing looking but so good)
•handful of strawberries
•added later: gf toast. On the mornings I run (yesterday) I always crave a few extra carbs so I was still hungry after eating this and grabbed some toast.

I'm sorry I've been MIA. I've been giving myself a little time to grieve. The day after arriving in CA I woke up to a text saying my grandmother had passed away. It wasn't unexpected, she had a years long battle with the painful and horrific bone cancer and over the last month, it was becoming clear that battle was nearing the end. However, I had thought I'd be able to see her one last time. 
I'm lucky to not have experienced a lot of death in my life, but the few times I have, the finality of it is always so intensely difficult.  Regardless of your beliefs of the afterlife, that person’s chapter/time on earth is still over. One of the coolest things about my grandma was her ability to realize “it’s not really about me.” And while that my sound like an odd trait to admire, I think it’s a little bit of the secret to life. Selflessness, the ability to see outside of your own world, to not take offense or take something personally, goes a long way to a happy life. ️

It wasn't unexpected, she had a years long battle with the painful and horrific bone cancer and over the last month, it was becoming clear that battle was nearing the end. However, I had thought I'd be able to see her one last time. I'm lucky to not have experienced a lot of death in my life, but the few times I have, the finality of it is always so intensely difficult. Finally sharing my paleo Nutella recipe! 
This recipe is on my blog, follow the link in profile, or for those of you who like to get your recipes on Insta (I’m right there with you), here you go!: adapted and added on to the recipe by @texanerin •	115 grams hazelnuts (probably about 2/3 cup, but grab a scale! ) •	1-2 T cocoa powder (depending how chocately you want it) •	1/8 c. @naturalgrocers coconut sugar •	2 T @nutiva MCT oil (can try melted coconut oil) •	1/8 of an @eatingevolved dark chocolate bar •	tiny pinch of salt
*optional: add a few scoops of @vitalproteins collagen! May need a little more oil. 
DIRECTIONS:
Preheat oven to 350. Roast nuts for 15 minutes, stirring and checking every 5 minutes. They should be fragrant (your kitchen will smell like heaven), light brown, with the skins easily coming off. Transfer nuts to a clean kitchen towel. Once they have cooled for a few minutes, use the towel to rub off most of the skins. 
Add all ingredients (careful to leave the skins behind on the towel) to a food processor, and mix. Your final product won't be quite as smooth as Nutella or other store brands, but it will be just as delicious!

This recipe is on my blog, follow the link in profile, or for those of you who like to get your recipes on Insta (I’m right there with you), here you go!: adapted and added on to the recipe by @texanerin • 115 grams hazelnuts (probably about 2/3 cup, but grab a scale! ) • 1-2 T cocoa powder (depending how chocately you want it) • 1/8 c. @naturalgrocers coconut sugar • 2 T @nutiva MCT oil (can try melted coconut oil) • 1/8 of an @eatingevolved dark chocolate bar • tiny pinch of salt *optional: add a few scoops of @vitalproteins collagen! May need a little more oil. DIRECTIONS: Preheat oven to 350. Roast nuts for 15 minutes, stirring and checking every 5 minutes. They should be fragrant (your kitchen will smell like heaven), light brown, with the skins easily coming off. Transfer nuts to a clean kitchen towel. Once they have cooled for a few minutes, use the towel to rub off most of the skins.  Add all ingredients (careful to leave the skins behind on the towel) to a food processor, and mix. BUCKWHEAT WAFFLES (on ze blog). For all of the many wonderful strengths the family I came from has, positive thinking wasn’t one of them. So, at 29, I’m trying to learn to be more positive. 
Because positive thinking has SO much power. Not only can it help us to achieve our goals and believe we have the ability to mold our lives into the way we want them, it can help us enjoy and see everything wonderful we have CURRENTLY. And when we try to see the good and positive in others, we start to treat them differently. It's hard to do sometimes, especially if someone is being unkind to you. 
I've never shared my current occupation. Although I'm working towards becoming a Registered Dietitian, in my twenties I sort of accidentally fell into debt collecting at various jobs, and ended up being pretty good at it (which sort of makes me sound like I have a black soul 🤷‍️). It's an occupation where I frequently experience people at their very worst.

Yesterday I spoke to a woman who told me her husband of 19 years had passed away. She started crying as she said He was the love of my life. And although I've heard every sob story in the book, this one felt more genuine, real, and raw. And I actually started crying a little myself. 
It was easy to empathize with this woman. It was easy to see the good in her. She was kind, she was vulnerable, she was willing to work with me. Not ten minutes later I got a call from a guy who was incredibly rude and belligerent. My empathy and kindess were instantly gone as I felt my defenses raised. I immediately just wrote him off as a huge jerk. 
And I realized, after he hung up on me, what a wonderful opportunity I've been presented with. I get to experience so many people at their very worst, and choose to see the good in them, choose to still be kind to them. It doesn't really matter if they are actually a mean person or just a nice person having a bad day - that's not for me to judge. 
But it is for me to see the good in them, whatever little there might be. And at the very least I can be kind. Being kind changes everything. ️

-sweet potato portion (follow my recipe on blog, add plant protein powder if vegan)

In honor of my 300th post: REAL LIFE. This is what dinner looks like for me many nights. 1 or 2 veggies (the sauce has sweet potato), a leftover protein, and some complex carbs. 
Occasionally I bother putting together something a little fancier, or crockpotting it up, but it’s frequently just something I’ve got prepped. (And if I’m not photographing it doesn’t look this organized haha). It might not get as many likes, or be as pretty as something elaborately put together, but it’s simple food that fuels me. 
I eat the way I do because of how it makes me FEEL. Not how it (the meal) looks, or how it makes me look (I don’t currently have a six pack). My food has to fuel me through a day of motherhood, work, school, and life. If I’m feeling crappy because I ate something crappy, I can’t be present. Eat the food that makes you feel good. That fuels you. That keeps you present

•green leaf lettuce •turkey meatballs (both meatballs and half of sauce are from @eaturselfskinny sriracha meatballs) •@eatbanza pasta and a sweet potato sauce (I made it after the sriracha sauce for the meatballs was too hot  so I combined a sweet potato cashew sauce with the sriracha sauce and it worked 🤷‍️)
